Let’s Bake! (Lolly Cake Edition)

I was in the mood for some sweets, specifically a lolly cake. I didn’t realize it was mostly just a big sweet in New Zealand. Have you guys heard of it before?

Anyway, I wanted it, and turns out it’s pretty easy to make. There’s not even any baking involved. It is also in no way good for you, but we won’t let that stop us.

Here’s what you’ll need:

  • 1 packet Eskimo lollies (190g)
  • 1 packet Malt biscuits (250g)
  • 120g butter
  • 1/2 can sweetened condensed milk
  • 1 cup dessicated coconut

Another question, do you guys have these lollies called Eskimos? They taste super soft when you bite into them, almost like a hard marshmallow.

Anyway, you break them all into little pieces.

Next, get your packet of malt biscuits.

Now smash them all into smithereens. I used a blender as it was faster.

Add the butter and condensed milk into a sauce pan and melt them over a low heat.

Now you need to combine all these ingredients into a big bowl. It gets pretty sticky at this point, but you need to roll your dough into a big roll. I made mine more of a loaf.

Put it in the fridge for a couple of hours. Before it gets too hard, slice it up, and that’s it! You have lolly cake.

It tastes just like the slices from the bakery. It’s sooo good, and also soo bad cause it’s super unhealthy. But once it’s a while, treat your self!

What’s your favourite treat from the bakery?

  1. Oh this seems weirdly easy to make, I thought it is complicated. Can’t wait to make this, it looks super delicious. xx

    1. That’s what i thought too! I was sure it would be tricky to make, but then i found the recipe and it’s really easy! It is so delicious ??

  2. I’ve never heard of this before but this looks so good!!

    1. I think its traditionally a kiwi thing, I’ve never seen it anywhere else. It’s so good though! Definitely good when you’re having a sugar craving ?

  3. I blend the malt biscuits too! I’ve tried the rolling pin and a bag method and it takes forever and the bag ends up getting holes in it. I don’t like coconut so we don’t put that on ours lol 😛

    1. I tried for like 20 minutes with the whole bag trick and it just wasn’t working. The blender is so much easier! I’m okay with coconut, but I didn’t add to much to ours in the end ?

  4. I have never heard of anything like this before! I’ve actually never even seen lollies before. The only thing I know of are just lollipops, haha. This looks like it would taste good though! It’s always fun learning what is normal for people in different areas.

    1. It’s definitely a kiwi treat! Lollies are everywhere here. Lots of different kinds. As well as lots of chocolate ? This recipe is super easy to do, and it’s such a sweet little treat!

  5. suuuuperrr curious… what are lollies? some kind of candy? 🙂 sorry, all i know are lollipops! they look delicious!

    1. Haha, lollies are pretty much candy. We call them lollies here 😀 The lolly cake is so good 😀

  6. I’ve never heard of these, but they do look tasty 🙂

    1. They’re so delicious!! 🙂

  7. Never heard about these before but considering they contain Eskimos , I should have! 🙂

    1. They’re so delicious! I really recommend it 😀

  8. Mmm it looks so delicious and pretty easy to make!! ? xx

    1. It’s really yummy and such a simple recipe ?

      1. I can imagine ?

  9. I am happy to see the recipe for this lolly cake. I have not actually heard of it before but it looks super delicious and not too complicated. 🙂

    1. It really is! It’s such an easy recipe with just a few ingredients! ?

  10. I am definitely going to try this!

    1. You should! It’s so good! ?

  11. This has to be delicious if it is so bad for me. :):) I’ve never seen “Eskimo lollies” but if I can find them, I am making these. I’ve been drooling over them since the first picture you posted of them.

    1. It is so tasty, and definitely bad for you 😀 It’s worth it though 🙂 Eskimo lollies are sort of like hard marshmallow candy. I have no idea what sort of candy you have access too, but as long as it has similar texture, it should work 🙂

      1. I’m going to do my best to find a way to make this 🙂

  12. I’ve never heard of a lolly cake before! Nor have I heard of eskimo lollies – they look cute though 🙂

    1. They’re a kiwi treat! I think the cake would work with any kind of hard marshmallow candy as well 😀 They’re so yummy 😀

      1. You know what though, I can’t even think of any kind of replacement we have here that is like a hard marshmallow XD

        1. ? Maybe some Eskimos are hiding in an international food store?

  13. I’ve never heard of lollies before but this looks just like the roll cakes! I plan on baking a few things this month, fingers crossed they come out good lol.

    1. I haven’t heard of roll cakes, but they do sound similar ?

      1. I think another name for them is swiss rolls? I’m more familiar with the Japanese fruit roll cakes because I see them that often in anime lol.

  14. I feel like I have been missing out! (as a former baker I really was!) This looks SOOOO yummy! <3

    1. I didn’t bake for ages, but blogging helped me get back into it! I love looking for new recipes to try. This was such a fun one to do 😀

      1. I have slowly gotten back into it, but more for fun then as a job 🙂 New recipes are the best! It looks it! I love trying recipes from around the world! <3
